I made the Chocolate-Peanut Butter Cloud Pie from Lisa Yockelson's Baking by Flavor this weekend. This is the second recipe I tried from her cookbook and the second one that turned out really well. The pie was a peanut butter crust (very dense), with a chocolate-peanut butter pudding on top of it (fairly dense), with a peanut butter mousse on top of that (light), topped with whipped cream (very light). Having three layers that tasted of peanut butter but with different textures worked really well. Each bite didn't feel heavy, but one slice was very filling.
As with the Blueberry Coffee Cake, this recipe took a lot of dishes. It also took a lot of time, but that's expected in a recipe with four layers. Still, the end result was amazing and this recipe is one I will be making again.
