I recently picked up the King Arthur Flour Cookie Companion. This weekend, I tried three recipes from the cookbook: Chocolate Peppermint Snaps, Amish Cookies, and Spiked Coffee Cookies. All three were successes. As described, the Chocolate Peppermint Snaps tasted like Thin Mints (although they look nothing like Thin Mints). The Amish Cookies were like oatmeal raisin cookies, though lighter in color, texture, and taste. The Spiked Coffee Cookies had a subtle kick from the Kahlua in them that elevated what would have been a boring cookie to something superb. I haven't had such success with a cookbook since Lisa Yockelson's Baking by Flavor. I'm looking forward to trying King Arthur's recipe for Vanilla Dreams as soon as I can get some baker's ammonia.
