This weekend, I decided to bake bread for the first time. I made a simple hearth bread (only flour, water, salt, honey, and yeast) from Rose Levy Beranbaum's The Bread Bible. While it took a lot of time (over 24 hours from start to finish), the amount of actual work was a lot less than I expected because much of the time was spent waiting for the dough to rise. It was also great stress relief because of the step where the dough has to be punched down. When finished, the bread had a nice crunchy crust and a pleasantly chewy interior. I would definitely make this recipe again, though I'm looking forward to trying more complicated and flavorful recipes. Eventually, I want to try my hand at sourdough.

i love bread
i do!

tho i've been making some breads with a bread machine of late
but i get lazy
and i want to make the interesting breads but the bread book says at step 3 continue to the non bread machine instructions and i freak

I was very nervous about making bread from scratch and worried that it was going to be difficult. However, it was much easier than I expected. The Bread Bible had excellent instructions (with pictures) on how to knead, shape, and slash bread. I wouldn't worry too much. You've made truffles, which is something I haven't done.

You haven't made truffles? You should. I'm sure somebody somewhere in Amherst wants :)

It's the time to make the bread...I'll make it soon I guess...there are some interesting breads in the book we got for mom. I do wish I had access to your cook books tho.

And it was yummy! We shared it with a dinner guest on Sunday night (when it came out fresh), jcobleigh used a couple of slices for his lunch today, and we ate the rest of it in bits and pieces yesterday, dipped in extra-virgin olive oil, balsamic vinegar, and some dried herbs. :)
