On Friday, reveilles and I went to Chef Wayne's Big Mamou in Springfield, MA. It is a very unassuming restaurant that you might be inclined to walk by and not give a second thought about skipping, however, the food was superb! We ordered crayfish quesadillas as an appetizer that came in a sauce that was both sweet and spicy. I had blackened catfish for dinner that was tender enough to not require a knife. reveilles ordered barbecued pulled pork, which was also excellent. Portion sizes were plentiful, and we both had leftovers. The food was spicy enough that you knew you were eating spices, but the spices did not overpower the other tastes on the plate. However, a small taste of the hot sauce provided on the table was enough to set my entire mouth on fire. I expect that we will be going back to Chef Wayne's Big Mamou again and maybe we will be adventurous enough to try the fried alligator.

Crayfish (also called crawfish or crawdad) are a shellfish closely related to the lobster popular in Louisiana cuisine.

reveilles and I thought of you when we tasted the hot sauce. :)
